Tonka bean cream
As promised last week, this week comes the recipe for a Tonka Bean Cream.
It is made just like vanilla cream, but instead of vanilla, I use Tonka beans.
In addition, I still had white chocolate eggs left over from Easter. They made the cream even creamier.
It becomes a little heavier in flavor due to the tonka bean. But, also wonderfully soft and warm.
It’s a real “comfort food”!

Here is the recipe:
Tonka bean cream
Ingredients
- 5 dl milk
- 1 egg
- 30 g sugar
- 15 g corn starch
- 40 g white chocolate
- ½ tonka bean grated
Instructions
- Bring everything together slowly to a boil, stirring constantly with a whisk.
- Then pour through a sieve into a bowl.
- Allow the cream to cool, stirring now and then so that no “skin” forms on the surface.
