Cold spring rolls – fresh and good
We know spring rolls better in the deep-fried version
Much fresher – and therefore more suitable for summer – are the cold spring rolls
I ate them for the first time in Vietnam. And there – on a boat-tour in the famous Halong-Bay – I also made them for the first time.
They are easy and quick to prepare. Only rolling the soaked rice leaf slices requires some skill.
But there is a little trick, which makes it easier
Instead of dipping the slices in water, where they get very soft very quickly (and therefore tear faster), you can just put them on a wet washcloth. There they will slowly soften, and you can roll them better.
Depending on your wishes, you can make them with meat, vegetarian, or even vegan. And depending on what you roll them in, they are also very decorative.
Cold spring rolls are also good for aperitifs
I decided to make a vegetarian version. Instead of tofu, you can also use chicken.
Of course, you can change my recipe as you like, depending on the ingredients you have at home or can find in the store.
You can count 3-4 spring rolls per person.
The spring rolls are then dipped in a sauce and eaten like this

Cold spring roll
Ingredients
Filling:
- Oil for frying
- Onions finely chopped
- Mushrooms
- Carrots finely chopped or grated
- Herbs: coriander mint, perilla
- Sprouts
- Tofu cut into small pieces
- Eggs cooked
To roll:
- Rice sheets
For the sauce:
- Fish sauce or soy sauce
- Water a little
- Garlic pressed
- Chili finely chopped (or little cayenne powder)
- Carrots finely chopped
- Cucumber grated
- Rice vinegar
- Lime juice
Instructions
Filling:
- Fry onions and mushrooms in a little oil, add tofu and fry for about 5 minutes
- Mix the fried with the rest of the ingredients (except the herbs)
Rolling:
- Put rice sheets on a wet washcloth and let them soak
- Put a portion of filling on it, put herbs on it, fold the bottom side then fold the right side, then fold the left side.
- Then roll up the rest of the rice sheet
- If you want extra decorative rolls, you can wrap the herbs so that those are visible from the outside.
Sauce:
- Mix everything together
