Cevapcici- a Balkan classic as a vegetarian variation
So, here is the last recipe from my cooking trip to the Balkans
After Ajvar and Djuvec rice, now it’s time for vegetarian cevapcici
Actually, cevapcici are longish shaped minced meat rolls. Depending on the country they vary in length between 5 and 20 cm. Originally, they were made of lamb, but nowadays they are often made of beef.
Today I felt like making a vegetarian variation and I must say, I really liked it!
Rice, bread, salad and of course Ajvar
Try it, it’s worth it!
Vegetarian cevapcici
Ingredients
- 500 g grilled cheese quorn or tofu roughly grated
- 1 small red pepper chopped
- 100 g breadcrumbs (about)
- 2 cloves of garlic pressed
- 2 small onions chopped
- 3 eggs
- 4 mushrooms chopped
- 2 tbsp paprika mild, hot or smoked paprika
- 2-3 tbsp parsley leaves chopped or 1 tablespoon dry parsley
- Salt/pepper to taste
- 3 tbsp of oil if necessary
Instructions
- Knead everything together and form Cevapcici rolls
- Either fry with oil in a frying pan or grill until crispy
