Caramellini – the ultimative caramel cookie

Just before Christmas, I don’t have much time to try out new recipes. And I can imagine that you must be very busy as well. Shopping for the party, wrapping gifts and eating various Christmas dinners. And hopefully strolling around some of the many Christmas markets, enjoying the lights and buying some presents.

But what I always take some time for, is to bake my absolute favourite biscuits.

The Caramellini taste so good in their original version that I don’t even change anything about them. I don’t even add a little spice, which is very rare for me. But what I can imagine is some cardamom in it. I will have to try it out.

Besides, they are made super-fast. The dough is simply formed into rolls and then cut. I got the recipe from an old Betty Bossi “Guetsli” baking book from 1988. Yes, even back then I loved this recipe. ?

These biscuits are called “Caramellini” and as the name suggests, they taste like caramel.

Here is the recipe:

Caramellini

Prep Time 15 minutes
Cook Time 7 minutes
Cooling time 30 minutes
Total Time 52 minutes
Course cookies, Dessert
Servings 20 pieces (circa)

Ingredients
  

  • 100 g butter
  • 170 g raw sugar
  • 1 tbsp honey
  • 1 egg
  • 1 tsp vanilla sugar best homemade ah, there is a spice in it ?
  • 250 g flour
  • ½ tsp baking powder

Instructions
 

  • Preheat oven to 220 °C
  • Stir the butter until soft, add the sugar, honey, egg and vanilla sugar and mix well. Add the flour and the baking powder and mix well.
  • Form the dough into a roll (4 - 5 cm thick), wrap it in foil and allow it to set in the fridge or freezer. Then cut into 3 - 4 mm thick slices and place on a baking tray lined with baking parchment.

  • Bake at 220°C for 6 - 7 min.
