Banana fritter with tomato and onion sauce
Ingredients
- 2 plantains
- 2 large onions
- 1-2 cans of pelati peeled, chopped tomatoes or 3-4 fresh tomatoes (cut into pieces)
- oil for frying
- Salt/pepper to taste
- Ev. spices like cajoun mixture
Instructions
Bananas
- Peel plantains, cut into pieces about 4 cm long
- Shallow fry banana pieces in enough oil until golden brown on all sides. Drain on a paper towel
- Place two banana pieces next to each other and flatten them (this works very well between two plastic sheets, e.g. in a plastic bag with a flat pan).
- Shallow fry the flat bananas again in the oil and sprinkle with a little salt
Tomato and onion sauce
- Peel the onions and cut them into big pieces
- Fry in a little oil
- Then add tomatoes and continue cooking until everything is soft.
- Season with salt and pepper and if you like with a spice mixture like Cajoun
