Coconut ice cream – the classic Thai ice cream.

You can find them on every corner there. And it tastes like tropical paradise.

I had leftover coconut sauce the other day. Sweetened, cooked, and slightly densified coconut milk I needed for sticky rice with mango. Another Thailand classic.

I simply filled this leftover sauce into popsicle molds and put them in the freezer.

Since the coconut sauce was very creamy, there was no ice crystal formation, and the ice cream was nice and creamy. For some, I mixed in some coconut shavings. This added a bit of “bite” to the ice cream.

This improvised coconut ice cream tasted very good. However, I still felt like trying a “real” coconut ice cream.

I decided to make a version without egg (it takes me too long to let it cool down, I don’t have enough patience for that), but with whipped cream.

The fat and air in the whipped cream help the ice cream stay creamy. The coconut milk should also be high in fat. If you can find coconut cream, that would be even better. You should be able to find it at a well-stocked Asian store.

If you don’t mind the work, you can of course make the coconut cream yourself.

You’ll need a lot of coconuts, a coconut grater, and a lot of patience. If you don’t know how to make it, here, you will find a tutorial.

I like it when it still crunches a bit between the teeth and have therefore added fresh coconut shavings.

Of course, you can leave them out. Or you can sprinkle them on the ice cream as decoration.

The lime juice adds a certain freshness.

You can either fill this coconut ice cream into popsicle molds, or you can put it in an ice cream maker and freeze it all together. If you don’t have an ice cream maker, you can pour the mixture into any mold and give it a good stir every half hour.

The ice cream is the best and creamiest right after it is made. If you have leftover ice cream, it’s better to put it in popsicle molds, as it will get a bit hard if frozen for a longer time.

Ingredients
  

  • 500 ml coconut cream
  • 2 dl cream whipped until stiff
  • 100 g sugar
  • 1 lime juice only
  • Coconut shavings to taste

Instructions
 

  • Mix the coconut cream, the whipped cream, the sugar, and the lime juice carefully (so that the cream does not collapse).

  • Add the coconut shavings if desired.
  • Put everything in the ice cream maker or freeze in a mold

Notes

If you have leftover ice cream, it is best to put it in ice cream molds, as it will become a bit hard if frozen for a longer period of time.
