What to do with leftover fresh ginger?

Do you sometimes have fresh ginger in your fridge that is slowly but surely rotting away?
You bought it because you wanted to cook a certain dish. You may have cooked that dish, but now you have a large amount of ginger left over. And you don’t know what to do with it.
I think this has happened to all of us at one time or another. Instead of consigning it to the compost, you can do a lot of fine things with it. Here are some ideas:
Ginger water
For one liter of water, you need a piece of fresh ginger about 2 cm big. You just have to grate it – with or without peel – and mix it with the water. Then put it in the fridge – after about an hour it is ready to drink.
Candied ginger
You can eat candied ginger instead of candy. Or you can make a fruit tea sauce with candied ginger.
I’ve never done this myself and need first to figure out the best way to candite.

Ginger tea
Peel ginger, and cut it into small pieces. Pour 3 dl of boiling water over about 1 tsp of it. Leave to infuse for 3-5 minutes, then strain. Sweeten with honey or rock candy. This tea warms the body and soul in winter. You can also eat the boiled ginger pieces.
Dry ginger
Peel the ginger and cut it into small pieces. Spread them on a thin cloth and let them dry in a warm place. On the stove, on a sunny windowsill, or in the dehydrator (on the dehydrator without cloth).
You can infuse the dried ginger as a tea, or you can make syrup from it.

Tea with ginger
Peel ginger and cut it into small pieces. Add to your favorite tea and pour everything together. Goes very well with black and green tea but also with rooibos or fruit tea.
Ginger ice cream
Simply add 1 – 2 tablespoons of grated ginger to the basic recipe.
Pickled ginger
This pickled ginger is mainly eaten with sushi. But you can also enjoy it with raclette.
