Avocado soup
Here’s a recipe for a cold spring-summer soup
Serve the avocado soup as an appetizer, or with a fresh slice of bread as a light main course.
For example, the black cumin bread tastes very good with it.
Wonderfully refreshing!
This avocado soup is quick, easy, and super delicious!
The Ingredients are for 4 pers. as an appetizer or 2 pers. as the main course:
Avocado soup
Ingredients
- 1 avocado
- 150 g cucumber
- 1 clove of garlic or about 20 cm of garlic herb
- 2 mint leaves Morocco-mint is excellent
- 2 tbsp lime juice
- 1 tbsp olive oil
- 1 tsp soy sauce
- 1 tsp vinegar
- 3 dl stock
- salt/pepper to taste
- Ice cubes to taste
Instructions
- Peel avocado and remove pit
- Peel cucumber and garlic
- Blend avocado and cucumber with the rest of the ingredients together until you get a homogeneous, creamy mixture.
- If it becomes too thick, add more stock.
